Turkey & Goat Cheese Pita Pizza

Ingredients:
* 1 Whole Wheat Pita
* 1/2 cup Mushrooms, sliced
* 1/2 Tomato, thinly sliced
* 1 oz Goat Cheese
* 1 cup Watercress
* 2 oz Turkey, roasted and sliced
Directions: 1. Preheat oven on Broil. 2. Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Top with mushrooms, tomatoes, turkey and goat cheese. 3. Spread the pita on a large baking sheet and place under the broiler for 4 minutes, or until the cheese has melted. Top with watercress. Serve whole, or cut into slices.

Ingredients:
* 1/2 cup Snap Peas
* 3 oz Turkey, roasted and sliced
* 1 cup Broccoli, chopped
* 1/2 cup Cauliflower, chopped
* 1/2cup Mushrooms, sliced
* 1/4 cup onions, chopped
* 1/2 cup Red Pepper, sliced
* 1/2cup Green Pepper, sliced
* 1/2 cup Brown Rice
* Cooking Spray
Directions: In a non stick frying pan, heat cooking spray and add snap peas, broccoli, cauliflower, mushrooms, onions, red peppers, green peppers. Sauté vegetables until softened. Meanwhile, prepare rice according to package instructions. Once vegetables are soft, add turkey to pan and toss to heat. Serve over rice.
