Vegetable Stir Fry

Ingredients:
* 1/2 cups Snap Peas
* 1/2 cup Carrots, julienned
* 1/2 cup Baby Corn
* 1/2 cup Mushrooms, sliced
* 1/4 cup Onions, chopped
* 1/2 cup Red Pepper
* 1/2cup Green Pepper
* 1 cup Spinach
* 1/2 cup Sprouts
* 1/2 clove Garlic, minced
* 1 tsp Ground Ginger
* 1 tbsp Low Sodium Soy Sauce
* 1 tsp Honey
* 1/4 cup Vegetable Stock
* 1 tsp Corn Starch
* Cooking Spray
Directions: Heat cooking spray in a non stick frying pan, add garlic and onion. Follow with carrots, mushrooms, red pepper, green pepper and snap peas. Add vegetable stock, soy sauce and ginger. Let hard vegetables soften. Meanwhile, blend corn starch with vegetable stock, soy sauce, honey and ginger. Once hard vegetables begin to soften add spinach and baby carrots. Get pan very hot, add vegetable stock mixture, constantly stirring until sauce thickens. Serve.
