Salmon & Spinach with Mashed Potatoes

Ingredients:
- 8 oz Salmon
- 2 cups Spinach, fresh (or 1 cup frozen)
- 1/4 Lemon
- 1 clove Garlic, minced
- 1 Potato, mashed
- 2 tbsp Butter
- 2 tbsp 2% Milk
- Cooking Spray
Directions: 1. Bring a pot of water to boil. Place roughly chopped potato in water to boil. Once soft, drain and mash, adding a tablespoon or so of milk and a few tablespoons of butter. Season with black cracked pepper. 2. In a hot non stick frying pan, spray with cooking spray. Cook salmon in pan until cooked through, about 5 – 7 minutes per side. 3. Remove from pan, and set side. 4. Spray hot pan and soften garlic, about 2 minutes. Add spinach; stir often, until spinach is wilted, about 1 minute. 5. Layer spinach and salmon, and squeeze with lemon juice. Serve and enjoy.
